This turned out so yummy and took 15-20 minutes tops. Super easy weeknight dinner!
Serves 2, although if you were adding another side I’m sure the pound of green beans would go further!
Ingredients:
2 cod fillets fresh or thawed (these were frozen fillets from Costco and really good! I like to use cod because it is affordable even wild-caught and very mild). You will want to take these out of the fridge about 15 minutes before cooking to take the chill off.
2 large slices of prosciutto or enough to wrap fish in if smaller slices. This is the prosciutto from Costco and it is my favorite.
2 TBSP of butter or ghee
About a 1/4 cup of lemon juice (I keep the organic bottle of lemon juice from Whole Foods on hand as my lemons always seem to go bad), but fresh lemons great here too, and nice for serving if you have them
1lb. French green beans, or regular fine too, trimmed – I love the haricot verts from TJ’s
Olive oil and balsamic vinegar to taste
Salt, pepper, and garlic powder
Directions:
Fill a pot with water, salt it, and add green beans – bring to boil and cook about 10 minutes or until desired tenderness
Once green beans are on the stove, use paper towels to pat cod dry and lightly salt and pepper both sides. Wrap with prosciutto so it has a nice layer around the whole fillet.
In a skillet, heat up the butter over medium high heat
Once hot, add the fish to the pan and cook about 5 minutes on each side for a 1 in. thick fillet, about half way through add the lemon juice to skillet
Remove fish to plates, drain the green beans, and toss them with olive oil, a drizzle of balsamic, salt, pepper and garlic powder to taste
You can add a little more butter and/or lemon juice to the skillet to warm up if you’d like, just spoon any remaining sauce over fish, and serve with additional lemon juice or lemon wedges
