Date and Shallot Rosemary Chicken from PaleOMG and Zucchini Noodles

My friend Kristin and I were talking about how much we LOVE the site PaleOMG. Seriously, her recipes are awesome. Last night I made her Date and Shallot Rosemary Chicken and it did not disappoint. So easy too. Whole Foods didn’t have shallots so I substituted with cipollini onions and just sprinkled over some dried rosemary instead of using fresh.

As for the zucchini, I am obsessed with my new favorite kitchen tool that spiral slices my zucchini into delicious noodles. It is amazing, you should get one. I simply spiral sliced 4 zucchini then sauteed in a few Tbsp. of butter with a little crushed garlic, salt, and pepper. Yum!

Hey there – That looks great! I just have a quick question – are you using a spiral slicer that has a few disks? Did you know that it also cuts them into noodles? I just wanted to make sure that you knew that. I love my spiral slicer and use it all the time.

    Thanks Crystal! Yes, it is the one with multiple discs. I used the bigger one this time, but yes, the smaller one makes them even more noodle like. So glad I could provide a little inspiration, I appreciate you reading : )
