I realize nowadays with the Internet you don’t necessarily need to buy cookbooks, there are so many recipes out there. But I occasionally like a good cookbook and I found one that is worth the money –  Well Fed: Paleo Recipes For People Who Love To Eat. Melissa provides not only lots of great recipes (I’ve already made 4 of them) but also provides great ideas on quick, easy dinners and makes putting together weeknight meals simple. One recipe that I am currently loving because it is so simple, fast and only requires I get 1 mixing bowl and 1 baking sheet dirty is her Paleo Czech Meatballs. Ground pork is also reasonably priced, even at Whole Foods. I didn’t have any fresh parsley on hand so I just used a few Tbsp of dried parsley and it worked just fine. Recommend cutting the salt in this recipe to half a tsp. rather than half a Tbsp.

While the meatballs are in the oven, I cooked up some sauteed cabbage, as Melissa suggests that as something good to serve the meatballs on. And I can assure you it is.

I just cut half a green cabbage (although next time I will try red) into strips and then add it to a pan that has a Tbsp of melted butter and a tsp. of crushed garlic in it. Then add salt and pepper to taste and sautee until soft.

I also sauteed up some frozen green beans in the pan with some butter and lemon juice. I am running low on veggies, otherwise I would have done something more colorful.

Then time to eat! Served the meatballs on top of the cabbage with the side of green beans. Very tasty!
