And We’re Off! Merry Christmas!

I can’t believe Christmas is just 3 days away, time is flying by! This will be my last post for awhile, I will be back resuming regular posting on January 4th, but will try to get a post in here and there while on vacation if I can! At the very least I will take pics to share when I return. We are headed to Tahoe tomorrow morning to spend Christmas with my Mom, Aunt, and Cousins, and then are flying to New York on the 28th to spend New Year’s and Michael’s 30th with his family. I am almost completely packed too, which is a relief as it is one of my least favorite activities.

Last night I cooked an amazing dish from Mark’s Daily Apple, Moroccan Chicken Casserole. Delicious! The only things I did differently was use ground ginger instead of fresh, used boneless, skinless chicken thighs because that is what I had on hand, and I didn’t realize I didn’t have a lemon until I got home. Using the different chicken just meant that I had to bake for less time – only about 30 minutes. Definitely give this one a try!

I also went ahead and packed our breakfast for Friday morning – our flight leaves at 7:45am so we definitely want to take along some food. That way we don’t get stuck buying nasty chemical, grain & sugar filled airport or plane food. Hard-boiled eggs, bacon (because it tastes good cold too), a little cheese, and almonds to snack on are all easy to travel with, delicious, and fill us up.

I seriously hate getting dressed the day before leaving on a trip because inevitably all of my favorite clothes are packed. So I threw this together. Not my favorite outfit ever, but I am comfy!

Ooh, so jealous you’re going to New York again. I’m looking forward to trying this recipce as I just made the curried meatballs you posted a couple of weeks ago.
(I’m going to include it with reference to you at our new SFF blog)

It’s so wise to pack your own airplane food. When we went overseas three months ago, I made a huge batch of almonds/pumpkin seeds/coconut flakes to take on the plane. Eating a handful of that every couple of hours with big swigs of water made it easier to forego all the snacks and “food” that are so tempting when you are bored on a plane for ten hours. It’s always a good reminder to be a control freak and plan for no food to be available rather than shrug your shoulders and hope for the best!
