Curry and Feta Mini Burgers

Last night’s dinner was a completely made up based on what I had on hand. Sometimes those turn out the best! I made a big double batch of Butternut Squash Soup and needed something to go along with it so I came up with these.

1/4 of a large onion, chopped

1 lb. grass fed beef (mine was delivered by!)

1-2 ounces of feta cheese

1/2 a Tbsp of curry powder

1/4 Tbsp of ground ginger

1/4 cup or handful of coconut flour or almond flour – not packed (I used coconut)

1 Tbsp Tamari sauce (gluten free soy sauce)

Sea Salt and Pepper – a generous sprinkle of both

1 Tbsp or so of unrefined coconut oil

In a bowl, mix all ingredients except coconut oil together

Form into small patties

Get coconut oil melted in hot skillet. Place patties in skillet and cook for about 3 minutes on each side or until desired doneness.

I served along with the delicious butternut squash soup that I topped with a sprinkle of goat cheese. Delicious and easy Monday night dinner!

Looks good!

OMG – that sounds and looks delicious! I wish I had a “smell-o-computer”!

This really looks delicious! I’m rethinking where we buy our meat after reading more about it. And they make flour out of coconut?! Wow!

Yeah, unfortunately so many animals now are fed an unnatural diet that does not produce high quality meat in the end. If you have a big freezer you might look into buying a 1/4 of a grass fed cow in order to keep costs affordable. And yes, coconut flour is great- just ground up coconut!

The sulky kitten

I love your recipes! I’ve just bought Mark Sisson’s book and will be making a serious attempt at low-carbing from tomorrow. I like the way you just rustle up something, and don’t get too complicated.

I do something similar with ground turkey meat. I add cumin, mint and feta. I have used ground flax seeds instead of coconut flour for a little binding. So good, especially grilled! I have some curry powder that needs to be used up, so I’m going to give your recipe a try.

That version sound delicious! Going to have to give that a try!
