Last night’s dinner was a completely made up based on what I had on hand. Sometimes those turn out the best! I made a big double batch of Butternut Squash Soup and needed something to go along with it so I came up with these.
1/4 of a large onion, chopped
1 lb. grass fed beef (mine was delivered by spud.com!)
1-2 ounces of feta cheese
1/2 a Tbsp of curry powder
1/4 Tbsp of ground ginger
1/4 cup or handful of coconut flour or almond flour – not packed (I used coconut)
1 Tbsp Tamari sauce (gluten free soy sauce)
Sea Salt and Pepper – a generous sprinkle of both
1 Tbsp or so of unrefined coconut oil
In a bowl, mix all ingredients except coconut oil together
Form into small patties
Get coconut oil melted in hot skillet. Place patties in skillet and cook for about 3 minutes on each side or until desired doneness.
I served along with the delicious butternut squash soup that I topped with a sprinkle of goat cheese. Delicious and easy Monday night dinner!
