Ingredients:
1 onion, sliced up
1 large pork loin (or you could use 2 pork tenderloins)
1 jar roasted peppers
2 cups Apple Cider
1/2 cup chicken broth
Crushed Garlic
Dried Thyme
Trader Joe’s 21 Seasoning Salute or other herb seasoning blend
Sea salt and pepper
Directions:
Slice up onion and put on bottom of pot
Put pork loin on top of onion
Sprinkle all sides of pork loin generously with salt, pepper, and 21 seasoning salute
Once done with that, on side up of pork loin, spread a thin layer of crushed garlic along with a sprinkling of dried thyme
Poor over apple cider and chicken broth
Cook on low 9 hour with timer, or all day
Come home to this
Using 2 forks, shred up pork, then slice up jar of roasted peppers and add. Stir so pork soaks up juices – add a little more cider or chicken broth if needed
Let warm another half hour or so to let juices redistribute
I served mine along with a cherry tomato and mozzarella cheese salad, as well as a frozen veggie mix that I microwaved then topped with butter, seasoned salt and a little parmesean.
