Have you ever literally almost cried during a workout? Well that was me last night at my Crossfit bootcamp. I am the last one not finished and I say that I really can’t do another 20 overhead squats (very deep squat done while holding a bar overhead) and am about to cry because I have already done so much work, then the coach and everyone in the group tells me I can, and I do!! While I hate it at the time, I must say that I am actually enjoying myself overall. It is rewarding to accomplish something you didn’t think you were capable of!
Stay tuned tomorrow for my (hopefully) yummy butternut squash beef stew that is currently cooking itself in the Crockpot! Here was dinner last night – Spaghetti Squash with Meat Sauce. So easy – just poke a spaghetti squash with a knife and microwave (8-12 minutes depending on size). Take out and let cool a little. Then just mix up your favorite meat sauce – mine is grass fed beef sauteed with onion and garlic, add a jar of organic marinara sauce, along with salt, pepper and basil. Cut open squash and remove seeds, then using fork scrape into bowls, and top with sauce and a little parmesean cheese. Clearly a nice big glass of red wine goes well with this – I needed one after my workout!
Today’s outfit is one I have been planning to copy since the Spring and I will admit I bought this shirt and blazer just so I could copy this look – in my defense the T shirt was only $10 and the blazer was $25 because I had a coupon, gotta love H&M. Of course they are versatile pieces that can be incorporated into other outfits as well, but really, I just loved this outfit of Erin’s so much, I had to recreate for myself! I really prefer my Citizen’s jeans for tucking into boots, but they are getting a little hem right now so I had to wear my Old Navy jeans instead – I guess that’s why it is good to have back ups! This is one outfit you might be seeing again!
