I have to thank my amazing wedding photographer, Joey Nicole, for this flank steak recipe. You can find ingredients at her Paleo Girls site here. It was so delicious that Michael and I argued over who got to take the leftovers for lunch today : ) Sadly, Michael won. My turn next time!
I was going to make basalmic asparagus and then changed my mind after taking the ingredients picture so it is a little off, sorry.
For Asparagus:
1 lb. frozen asparagus
About a Tbsp. of butter
1 lemon
2 Tbsp. white wine
Garlic Salt
Lemon Pepper
Salt and Pepper
Parmesan cheese (optional)
Directions:
Preheat your grill pan, indoor, or outdoor grill
Put steak out on platter or cutting board
Put salt and pepper on side up of steak
In a bowl mix all other seasonings together
Use half of the seasonings to rub on side up of steak
Put seasoned side down onto grill
Then salt, pepper, and use rub as above on the side up
Grill on both sides for about 10 minutes (I used lid, so if you are not using you may need to cook longer) Cook until desired doneness
When your steak is about done, get your asparagus going. Just take your steak off the grill when it is done and let it rest while you finish the asparagus
In a large skillet, get your butter melted
Then add asparagus to skillet
Sautee for a few minutes, then add juice from the lemon and a few splashes of white wine
Season with salt, pepper, garlic salt, and lemon pepper and continue to sautee until cooked through
Just serve along with your asparagus sprinkled with parmesan and an avocado on the side! So easy and delicious!
