I love my slow cooker, but sometimes I just need meals that can come together when I get home. So easy to cook cuts of meat, like pork chops, are perfect for those nights. This broccoli is a take on our favorite dish at the restaurant “Black Bottle” that is right behind our condo building. There they actually use a blowtorch on it, but since I don’t have one of those, my broiler does the job instead.
2 bone in pork chops
1 pound Organic Broccoli florets
Basalmic vinegar – check sugar content when buying, ours only has 3 grams per serving, but Michael’s mom had sent us one that has 12! (we only pull that out for special occasions)
Sea Salt and Pepper
Crushed Garlic (2tsp)
Red Pepper flakes (optional)
Pre Heat broiler to low
While that gets started pull out your pork chops
If you are using grill or grill pan, rub butter on grates, if using skillet just put down a tsp or so in the skillet
Open up package and on side up, season with salt, pepper, garlic salt, and a splash of basalmic vinegar
Then put seasoned side down on grill and do the same with the other side
Flip a few more times, adding a splash of basalmic vinegar each time and leave on until cooked through – only takes about 15 minutes
While your pork is cooking, keep an eye on your broccoli, once one side is a bit blackened, use tongs to flip it over to the other side and put back under the broiler. Mine doesn’t look that blackened in this picture, it could probably have gone a little longer, but it was delicious.
Then I just sprinkled a few red pepper flakes over the top and then put on the plate (this is optional)
And the finished dinner! Yummy! (I had also made a few sweet potatoes on Sunday, so we added a quarter of one of those to each of our plates along with a pat of butter). This picture didn’t turn out all that great, but you get the idea : )
