My good friend Kristin and I were talking last night and she said she needed some slow cooker recipes. Well, I currently have a pork loin in the crock pot today that was a concoction of 2 recipes, so that will be coming tomorrow, but here is one I also suggest from a great site, Everyday Paleo. I made this last week, and didn’t take a pic, but here is the link!
Only thing I did differently was to add yellow squash to the mix (I accidentally forgot to put the carrots in as well, that probably would have made it even better)
I also used chicken breasts I had on hand, as well as just bone in chicken thighs as I couldn’t find boneless ones. The meat was so tender it fell right off the bones and didn’t matter one bit!
I must say this was also my first time ever using Parsnips in a meal, and I have been missing out, they were the best part about it. Dont’ skip those!
