There’s nothing I love more for dinner in fall than a delicious pot roast. And no easier way to make one than in the slow cooker!
I threw this together in about 5 minutes yesterday and we had an amazing Sunday dinner 6 hours later!
3 pound chuck roast (or any beef roast, I’m sure pork would be delicious too!)
4-5 carrots cut in chunks (or use half a p0und of baby carrots)
1 large yellow onion, sliced
4-5 parsnips, peeled and cut in chunks (I get a bag at Trader Joe’s)
2 gala apples, chopped
1/2 cup applesauce
1/2 cup beef broth
1/2 TBSP crushed garlic
Seasonello Herbal Salt (love this stuff, if you don’t have just use dried herbs like rosemary and thyme with salt and pepper)
Sea salt and pepper
In the bottom of Crockpot put onion, parsnips, apples, and carrots and sprinkle with herbal salt
Season chuck roast on both sides with salt and pepper and put on top of veggies
Take crushed garlic and spread on side up of roast
Then layer applesauce on top of that
Pour over beef broth
Cook on low for 8-9 hours or high for 6-7
Season to taste as needed
Headed out for drinks with my high school friends’, Mario and Elena, last night in my cute new mini dress. This dress is so easy to wear and dress up or dress down. Very comfortable too. I’m taking advantage of this warm weather to do fall looks with bare legs – soon it will be time for tights!
I paired this look with these booties that were a birthday present I picked out on our visit to London in August. Love them!

Headed out to happy hour with some girlfriends and I wanted to get a little dressed up! It is a gorgeous day out, over 70 degrees, perfect to take this skirt for a spin with bare legs.
I came across this little retro crop top at H&M and fell in love – plan to also wear it with my black fluid pants. I’ve had these shoes less than a month and already had to have the heels replaced – they are so comfortable! (and only $30!)

Happy Friday! It has been a super stressful week at work and I am so ready for the weekend. Tonight we are headed out with our Childfree meet-up group, and then tomorrow I have a brunch and a museum trip with my sorority group – they keep me busy!
I’ve shared my love for Hue leggings many times on this blog, and I’m so excited to take my new “ultrasuede” pair out for a spin. Love the rich purple color (I also got them in black), so comfortable and perfect for fall with heels or boots.

Did everyone have a great weekend?! Had a fabulous night out on Saturday with friends at Park Avenue Autumn, a restaurant that changes seasonally. One of my favorite meals in NYC so far – if you are in the city then go! Sunday I headed to brunch and to see Gone Girl with the sorority girls. I loved it! Anyone else seen it yet?

Wore this outfit last Thursday night out to dinner with my friend April. It was a day that was definitely feeling like fall so I pulled out my plaid clutch to mix things up.

Thursday night we got a sitter for Emma and headed out to dinner at The Heath, a fabulous restaurant in Manhattan.
I’ve been looking everywhere for some flattering “track pants” and was so happy to find these fluid fit pants at the Loft – they are so comfy and very versatile! And these gorgeous burgundy suede pumps with a comfortable mid heel are from Target – score!

Can’t believe the weekend is almost here! We have a busy one ahead! 5 friends from Seattle are coming out and staying with us to attend the Sounders game on Saturday. Our friends Jed and Lorena are bringing their baby, Emma, along too and I can’t wait to meet her!
